So many of my recipes start with a cube of butter. My daughter has compared me to Paula Deen because of our love of butter (and our southern twang). Today I made vegan chocolate chip cookies with NO BUTTER. I can hear the gasps of those who know me well.

These are expensive cookies, however. They have very unusual ingredients, all of them organic, and that drives up the price. Gluten-free flour, flax meal, coconut oil, and vegan chocolate chips are pricey enough, but then there is the magic ingredient, xanthan gum. A small bag of this powder was over $11, and you only use 1 and 1/2 teaspoon. So, dear Reader, if you live in Fresno, and you want xanthan gum, I can provide some.
Oh, and the cookies…they are really good. For years I made an excellent chocolate chip cookie that all my friends liked. This cookie is comparable.
