In my pea pod post I mentioned that the peas went nicely with a chicken and rice casserole. This is a dish I have been making all my life; my mother made it for years also. It is so easy and works well with chicken or turkey.
1 cup chopped onion
1 cube of butter
1 tsp salt (I use more, but you can season to taste after the casserole is finished)
1 cup cubed cooked chicken (I used roasted chicken or turkey leftovers)
1 cup white rice
1 can of chicken broth (about 2 cups)
Preheat oven to 350
In casserole dish, put butter, onions, and salt. Microwave for about 3 minutes, stirring once. Add chicken and rice to casserole dish. Stir
Put chicken broth in microwave cup and heat for 2 minutes. Add to casserole dish, stir. Place casserole dish in preheated oven, bake for 40-45 minutes.
This dish will hold well in the oven while you wait for everyone to get home for dinner.
