This dish, or a similar version, is my go-to dinner dish during the summer when the csa box arrives each week with a bounty of onions, peppers, squash, tomatoes and basil. I had some sausage I threw into this batch and finished it off with a handful of penne pasta. Easy and delicious.

I like this idea of a ‘handful’ of pasta, I should try this as opposed to the traditional pasta dishes where it’s mostly pasta. Your dish looks beautiful!
I actually got more pasta in this pan than I usually do, but it tastes really good. The sausage had just enough kick to jazz up the pasta. Terry likes this as leftovers for lunch the next day.
Me, I’d have to pick out the peppers, but I say yum to the rest!
I can eat red peppers, but not green. Just leave out the peppers and throw in some corn. Lots of great veggies coming our way right now.
