Many of you asked about the recipe for celeriac soup. I used the recipe that was included in my csa box so I guess I can share it.
Chop 2-3 leeks, white part. Sauté for a few minutes in a tb of butter in soup pot Peel and chop 1 celeriac and one russet potato. Add veggies, 4 c vegetable broth, and 1/3 cup slivered blanched almonds. Bring to a boil & cook about 45 min. When the veggies are soft, either use a stick blender or cool the soup and blend batches in a food processor. Stir in 1/2 -3/4 c cream or almond milk. Use white pepper and salt to taste.
